Coconut Cupcakes


I made coconut cupcakes a few weeks ago, after deciding that I should be adventurous and make something from a whole coconut. I enjoyed cracking it, but peeling off the flesh was a pain. I was going to make coconut sorbet out of the coconut water (learned something new: it's not milk in the coconut, it's water!), but in the process of making it up, I curdled my creation by adding lime juice to the sweetened coconut milk I had made. Luckily, the coconut flesh was still salvageable. I put it through the food processor, added some corn syrup, and toasted it in the oven. YUM.
